Ingredients
For batter
4-5 eggs
1/2 cup all purpose flour
2-3 tbsp sugar
1/2 tsp cardamom powder
Pinch of salt
For filling
3/4 cup grated coconut
2 eggs
2 tbsp sugar
Cashews and raisins (fried in
ghee)
1 tbsp poppy seeds (roasted)
1 tbsp sesame seeds (slightly
roasted)
Nuts of your choice (finely chopped)
1 tbsp ghee
Preparation
Mix all the ingredients listed
in batter section to make a smooth batter of dosa batter consistency. Keep the
prepared batter aside
For the filling
Heat a pan add ghee then add
two eggs, scramble it and keep aside. In the same pan mix coconut and sugar,
cook till all the sugar incorporate well with coconut. Now add scrambled egg,
cardamom powder, poppy seeds, sesame seeds, nuts, cashews and raisins. Switch
off the flame. Let it cool.
Let’s begin mutta madakku
preparation. Heat a small round shaped pan. Add ghee then pour one ladle full
batter and spread to make a thin pancake. Keep in low flame. Once it started to
cook take two spoons full of prepared fillings and place in one side of the
pancake. Flip the other side on filling. Now half portion of the pan will be
empty pour batter into that side and let it cook then add filling on non folded
side. Flip the other side on top of filling repeat the process till batter and
filling finishes.
