Fried boiled egg/ Mutta porichathu (Malabar)/ masala mutta




Fried boiled egg is the simplest recipe that I know. This is a common street snack item in Vatakara area (Malabar region of Kerala, India). You can find out people preparing this in road side trolleys and it is a best selling snack item.

Ingredients
Egg                                                           :  6
Chilli powder                                            : 2 tsp (or Kashmiri chilli powder 3 tsp)
Turmeric power                                       :  ¼ tsp
Ginger garlic paste (optional)                  : 1 tsp
Salt to taste
Curry leaves  (optional)                           : 3 stalks
Oil for frying (shallow fry)                     : 2 tbsp

Preparation
  1. Boil egg and remove shell
  2. Make 5 or 6 vertical slits on egg. (don’t cut them fully)
  3. Make a paste with all spice ingredient with water and add curry leaves
  4. Coat this spices on boiled egg properly and make sure all slits covered properly (to help masala enter throgh slits)keep aside for half an hour
  5. Heat oil in pan at low flame and shallow fry eggs in it
  6. Evenly fry all sides and serve
