Date coconut fritters



Date fitter is my all time favorite snack. Normally I prepare simple date fritters but today I prepared something different. This one you can use as a sweet dessert if you avoid frying and can use as snack after deep frying.  While planning to prepare this my primary concern was kids so I prepared it as kids snack.

Ingredients
Minced pitted date                         : 1 cup
Shredded coconut                           : ½ cup
Powdered badam                             : 2 tbsp
Cardamom powder                          :  ½ tsp
Cashews                                         : 15-20
All purpose flour                           : ¼ cup
Corn flour                                     : ¼ cup
Salt to taste
Oil for fry

Preparation
  1. Mix minced date, badam, cardamom powder and shredded coconut together
  2. Take small part of date mixture and flatten with your finger
  3. Place one cashew on it, seal and make round ball. (In this stage you can use it as sweet dessert and no need to go for further step. But I like crispy date fritters so prefer frying)
  4. Mix all purpose flour, corn flour, salt and enough water to make batter (it should not be too thick)
  5. Heat oil in a pan at medium high flame
  6. Dip each balls in batter and deep fry until it turns golden brown color
  7. Drain and serve hot
