Egg kabab't have work tension so I prepared my husband's favorite dishes bread upma, prawn biriyani and chilli bajji he is very happy...
This Egg kabab I prepared long back but I couldn't post so decided to post today. It is a very tasty kids friendly snack (if you avoid chilli). It can serve as appetizer and also as evening snack. You can try this with modifications by adding more veggies or chicken pieces in potato mixture and instead of bread crumbs you can use oats. 

Hard boiled eggs                                     : 5
Boiled potato                                          : 3
Onion                                                     : 2 
Green chilli                                            : 4
Pepper powder                                       : 1 tsp
Kabab masala or garam masala                 : 1 tsp
Chopped ginger and garlic                       : 1 tbsp
Coriander leaves                                    : 2 tbsp
Salt to taste 
Egg                                                       : 2
Bread crumbs                                        :  ½ cup
Oil for fry


1.  Add 1 tbsp of oil in a pan and fry sliced onion till it turn transparent
2.  Add chopped green chilli, ginger and garlic one by one and saute well
3.  Then add pepper powder, kabab masala or garam masala and salt. Mix well and saute nicely
4.  Mash boiled potato and mix with above mixture
5.  Finally add coriander leaves into it and let it cool
6.  Cut hard boiled egg into four pieces and keep aside
7.  Take small part of potato mixture and flatten with your finger
8.  place one piece of egg at center
9.  Then roll nicely and repeat
10. In a bowl mix egg
11.  Dip each roll in egg and then coat with bread crumbs
12.  Heat oil in a pan at medium high flame and deep fry each roll till it turn golden brown color
