Fish Majboos



My mother prepare this in different way here I put my own ideas. I think Kingfish only give exact taste for this rice recipe so I will not encourage other fish. We can prepare this with Prawn also but method will be little bit different.

Ingredients
Kingfish                                   : 1 kg
For fish fry 1
Out of 1kg fish take 200g and cut into squiae pieces
Turmeric powder                     : ¼  tsp
Pepper powder                        : ½ tsp
Salt to taste
Oil                                         : ½ tbsp
For fish fry 2
Chilli powder                          : 1 ½ tsp
Kashmiri chilli powder             : ½ tsp
Turmeric powder                    : ¼ tsp
Lemon juice                            : 1 tsp
Oil                                        : 1 ½ tbsp
Other
Basmati rice                           : 1 kg
Clove                                     : 5 (crushed)
Crushed cardamom                  : 1 tsp
Cinnamon stick                       : ½ inch (crushed)
 Onion                                   :  2
Tomato                                  : 3
Chopped ginger                      : 1 tbsp
Chopped garlic                       : 1 tbsp
Green chilli                            : 2 (split into half)
Turmeric powder                    : ½ tsp
Pepper powder                       : 2 – 3 tsp (depends on your taste)
Majboos masala                      : 1 tsp (optional)
Dried lemon                           : 1
Salt to taste
Oil                                        : 2 tbsp



Preparation
  1. Divide the fish into two part (small portion of square pieces and large portion of big pieces )
  2. In a bowl add chilli powder, turmeric powder, salt and lemon juice and make thick paste
  3. Marinate this on big pieces of fish and keep it for half an hour
  4. Add 1 ½ tbsp of oil in a pan and fry the fish pieces
  5. Marinate small pieces of fish with turmeric powder, pepper powder and salt
  6. Then fry in ½ tbsp of oil (just fry for 1-2 minute)
  7. Drain and keep it aside
  8. In the same pan add little more oil then crushed clove, cinnamon and cardamom
  9. Once smell comes add chopped ginger and garlic
  10.  Add sliced onion. Saute well then add chilli, turmeric powder, pepper powder , majboos masala and salt
  11. Add sliced tomato and fried small fish pieces mix well
  12. Add enough water and dried lemon. Cook for 15 minute
  13. Transfer this fish curry in pressure cooker (measure the curry and add more water to make around 1.4 liter)
  14. Once boiling started add salt and washed rice
  15. Close the lid and cook till one whistle comes
  16. Mix slowly to make sure  ingredients distributed evenly
  17. Add fried fish in rice, mix carefully and serve hot
