Egg pulao

Last week I was busy with my office work so I couldn't get chance to post recipe and even to try new recipes. I am sorry my fellow bloggers I didn't check your new recipes I am sure I missed lots of delicious recipes, that all I will visit soon. 
Today I am posting egg pulau. Actually I am little bit confused what I will call this? egg pulao or scrambled egg pulao? You decide ;)

2 cup basmati rice
4 eggs
1tsp of chilli powder
1 tsp of garam masala (cumin, fennel,cloves, cinnamon, cardamom, black pepper, coriander and nutmeg)
Salt to taste
1 onion (sliced)
2 green chilli (chopped)
1 tsp of chopped ginger and garlic
1 tomato (chopped)
1 tsp of pepper powder
3 cloves
Small piece of cinnamon
I basil leaf
10 pepper corn
1 onion (thinly sliced)
4 tbsp of oil
3 ½ cup of water

1)    Wash and soak the rice for 30 minute
2)   Mix egg, chilli powder, garam masala and salt. beat well and keep aside
3)   Fry sliced onion in 1 ½ tbsp of oil
4)   Then add chopped green chilli, ginger and garlic
5)   Saute well and add chopped tomato
6)   Once all become soft add egg and scramble well. Keep aside
7)   In a pressure cooker add remaining oil
8)   Once oil become hot add cloves, cinnamon, pepper corn, basil leaf
9)   Add onion and fry till it become golden brown color
10) Add water and salt then rice
11)  Finally add egg mixture and pepper powder
12) Close the lid. Once first whistle comes keep 1 minute more in flame then turn off the fire

13) Open the after 15-20 minute. Mix slowly and serve hot

Chicken lollipop

Today I am little bit tired... I presented my 10 month research achievement as Poster in a conference. I was standing in front of poster from morning :(...So not going detail of today’s post chicken lollipop...You just try :)

250g of Chicken wings  
1 ½ tsp of pepper powder
½ tsp of lemon juice
1 tsp of garlic paste
1 tsp of ginger paste
Salt to taste
2 tbsp of corn flour
1 tbsp of ginger paste
1 tbsp of garlic paste
1 egg
1 tsp of chilli powder
1 tsp of soya sauce
Bread crumbs for coating
Salt to taste
Oil for fry
Make the chicken piece as lollipop
1.     Chicken wing have 3 parts .Cut and discard the small part
2.    Then remaining part make into 2 pieces
3.    Take one piece then hold one end and cut the meat on other end. Push the meat and turn upside down
1.     Marinate the chicken with pepper powder, 1tsp of ginger paste, 1 tsp of garlic paste , salt and lemon juice
2.    Keep this for 30 minute
1.     Mix corn flour, 1 tbsp of ginger, 1 tbsp of garlic and egg
2.    Then add chilli powder, soy sauce and salt. Mix well
Final preparation
1.     Dip each marinated pieces in egg batter
2.    Coat the chicken pieces on bread crumbs
3.    Fry them on medium hot oil till they turn golden brown color

Pineapple curd rice (for kids)

Wow climate changed winter started...after two days of rain now the atmosphere changed little bit. Day before yesterday I stuck in the office but I didn't stay there more, here my son is waiting me that feel insisted me to walk through rain. Now slight fever :) .. So today didn't enter kitchen my sister preparing foods (some special food she is preparing good smell is coming here... Don't know I can able to eat or not).

Today I am posting pineapple curd rice. Curd is not suitable for cold season especially for children but this I prepared last week before climate started change. In my previous post I mentioned how much I am troubling to feed my son. This I prepared for him and his cousin so made some changes.

Here I adapted my friend Salma’s curd rice preparation. I met her in Bangalore five year before when I worked in a company there . She used to bring curd rice with different types of fruits that was a very tasty and rich rice. Still I remember that taste. I don’t know where she is now I lost her contact (wherever you still I remember Salma..). Now I am trying to prepare some of her special dishes ;). 

1 ½ cup of Cooked rice
1 ¼ cup of full cream yogurt
3 tbsp of milk
2 tbsp of butter/ ghee
2 tbsp of cashews
½ tsp of mustard seed
½ tsp of chopped ginger
2 chillis (finely chopped)
2 stalks of curry leaves
1 cup of chopped pineapple
2 tbsp of raisins
 Salt to taste

1)    Mix yogurt, milk and salt into mashed cooked rice. Keep aside
2)   Heat ghee or butter then add cashews saute for few seconds
3)   Add mustard seed once it started to splutter add ginger, green chilli and curry leaves
4)   Saute well and add chopped pineapple saute for 1-2 minute. Let it cool
5)   Add this into rice yogurt mixture and mix well
6)   Finally add fried raisins along with ghee

Easy dal curry/fry (lentil curry)

This post is especially dedicating for my friend priya she is a busy working mom. She asked me to post a simple curry that can easy to prepare during her busy working days. So I told her Nishad (my hus:) ) used to prepare easy curries that I will post.
Yes today’s post is my hus contribution. He loves dal curry so most of the time he will be doing some experiment on dal (one thing I have to admit he is a good cook). This is an easy curry with few ingredients. He prepared this curry I just took photos ;). Actually this is new generation version of my MIL's dal curry!! he made changes.

1 ½ cup masoor dal / split pea (he used masoor dal but try to use split pea that is tastier)
¾ tsp turmeric powder
Salt to taste
1 ½ tbsp of oil
1 tsp of mustard seed
1 medium sized onion (chopped)
6 dried whole round chilli (he used 10 chilli. It depends on your spice level)
3 Green chillis
Curry leaf

1)    In a pot add dal, turmeric powder, salt and pour water up to ½ inch above
2)   Switch off the flame when it half cooked
3)   In wok add oil then add mustard seed
4)   Once it spluttered add onion and red chilli fry till nice fried smell comes (squash chillis while stirring)
5)   Add half cooked dal add water and cook for few minute
6)   Finally add curry leaves and chilli

7)   You can serve this as curry or fry (by reducing the water)

Pressure cooker cake- Black forest

I prepared this cake without using oven. I know oven is not a common cooking option in everywhere so I took a chance to prepare cake in pressure cooker. Normally we Malabar people prepare some traditional cake varieties in pressure cooker by keeping that in mind I prepared this. But nobody can differentiate it. I will call it as black forest cake because I tried to make black forest cake :)  . No it was black forest cake trust me cake was really yummy it got exact taste. 

4 eggs
¾ cup of all purpose flour
¼ cup of coco powder
1 ½ tbsp of vegetable oil
1/3 cup sugar
1 tsp of vanilla essence
½ tsp of baking powder
½ tsp cooking soda
Pinch of salt
1 1/2 tsp of butter
3 tsp of cherry syrup
1 cup Whipping cream
¼ cup of powdered sugar
½ tsp of vanilla essence
½ cup of chocolate shave

1)    Separate egg white and yolk
2)   In a bowl add egg yolk and sugar beat well till it become 3 fold
3)   In a separate bowl beat egg white to make thick peak
4)   Mix egg white with yellow carefully. Add vegetable oil and vanilla essence into this
5)   Sieve all purpose flour, coco powder, baking powder, cooking soda and pinch of salt at least 2 times
6)   Add this all purpose mixture into above egg mixture
7)   Mix carefully and transfer this in heated pressure cooker containing 1 ½ tsp of melted butter (I used 5 liter pressure cooker) 
8)   Close the lid without pressure cooker weight
9)   Cook in low flame till cooked smell comes out through nozzles
10) Or cooks till an inserted tester comes out clean and let it cool
11)  In a bowl add whipping cream and whip well to get thick peak in between add ¼ cup of powdered sugar
12) Once the cake cooled make two or three pieces
13) Sprinkle one tsp of cherry syrup on each pieces of cake
14) Layer one piece of cake with whipped cream then place another piece of cake
15) Complete the all pieces and at last cover the cake with whipping cream and shaved chocolate

16) You can decorate this with cherry and can add pieces of cherries in each layer
