Vermicelli cake

Vermicelli we normally use for Payasam (Kheer) or for pasta preparation but here I used vermicelli for cake. You know its taste is exactly as Payasam. Normally my husband doesn’t prefer cake but this one he ate more than two pieces. When he told it’s very tasty I was surprised!! What he is appreciating for cake? Then I realized because of its payasam taste he love Semiya (vermicelli) payasam;) OK so I am happy :) .
100g vermicelli
2-3 tbsp butter (to fry vermicelli)
2 tbsp butter
3 tbsp sugar
2 eggs
¾ cup all purpose flour
½ tsp baking powder
Pinch of salt
¼ cup milk
3 tbsp condensed milk
1 tsp vanilla essence

1)    Heat 3 tbsp of butter and fry vermicelli till it turn golden brown .switch off the flame (proper frying is critical for this cake preparation)
2)   Add milk into it then keep for 10 minute (optional)
3)   In a bowl mix 2 tbsp of butter and sugar. Beat well 
4)   Add eggs beat well till it become 2 fold
5)   Then add all purpose flour along with baking powder, and salt
6)   Add vermicelli with milk and condensed milk. Mix well (if batter is too water add 1 or 2 tbsp of all purpose flour)
7)   Add vanilla essence and mix nicely
8)   Pour the mixture in a greased  pan

9)   Bake at 1300C at 45 minute

Luqaimat (sweet dumpling)- an Arabic sweet

Luqaimat is an Arabian sweet dish - fried dumpling coated with sugar syrup. It is a common Ramadan dish. My colleague told it has another name also but I am not remembering that name. I have so many Arabian friends they used to share some good recipes with me. Break time chit chat with them gives delicious food information ;)
I am a kind of person who loves to taste different foods so when I go for shopping my eye will stick on glass shelf having foods. I simply note those names that are not familiar for me and after reaching here in office I used to ask my colleagues about those dishes.

1 cup all purpose flour
1 – 2 tbsp corn flour
1 tsp instant yeast
1 tsp of sugar
1 tbsp of yogurt (optional)
Pinch of salt
½ cup warm milk or water (sometimes water may require around ½ cup not exact ½ cup)
Oil for fry
For syrup
1 cup sugar
1 cup water
¼ tsp of crushed cardamom
Pinch of saffron (optional)


1)    Mix all purpose flour, corn flour, yeast, sugar, salt and yogurt one by one
2)   Then add milk to make batter. It should be in dropping consistency not too watery and too thick
3)   Keep covered for 1 hour
4)   Prepare syrup- add sugar and water boil till it become thick syrup. Then add cardamom and saffron. Let it cool
5)   After 1 hr batter will rise enough. Heat oil in a wok. Drop very small portion of batter in oil (it will form round shape)
6)   Fry till it turn golden brown color

7)   Drain  and put fried dumpling in syrup coat well then take out and serve

Date cake

Today I am with one of my favorite cake that is date cake. Easy simple and tasty one. Date is having so many health benefit so it can call as healthy cake. I know healthy term is not suite for me because I never posted any healthy recipes and most of my recipes are high caloric. But I am sure that I didn't post any daily basic recipe so once in while caloric food is OK right? :) 

1 cup pitted dates
30 g butter
¼ cup brown sugar
2 eggs
¾ cup all purpose flour
¾ tsp of baking powder
Pinch of salt
½ cup brown sugar
¼ cup water
30 g butter
3-4 tbsp condensed milk/ cream (if you are using condensed milk reduce sugar)

1)    Boil 1 cup of water then add dates in it. Cook at low flame for 5 minute
2)   Turn of the flame once it cooled well mash well in a blender. Keep aside
3)   In a bowl add butter beat well then add sugar
4)   Once it became smooth add eggs and beat well
5)   Then add all purpose flour with baking powder and salt ( sift these at least 2 times)
6)   Blend well and add date. Mix and pour into a 9 inch greased pan
7)   Bake at 1400C for 25 minute
8)   Mean time prepare topping
9)   Melt sugar in a pot add water
10) Once sugar melted well add butter
11)  Switch off the flame and add cream/ condensed milk. Let it cool

12) Add this on top of the cake and serve

Fish rice/ Malabar meen choru

Today I am posting very easy rice recipe that is our own Malabar fish rice we call it as Meen choru. This is very easy recipe so I didn't put step wise picture. Here only we have to mix all ingredient in pressure cooker (one by one) and just cook that's it. But taste wise no compromise its very tasty one. 

2 cup biriyani rice (I used kaima rice)
500 g King fish/ fleshy fish (I used king fish)
3 clove
1 inch cinnamon stick
1 bay leaf
2 onions (sliced)
2 tomatoes (sliced)
5 green chillies (chipped)
2 tsp chopped ginger garlic
½ tsp turmeric powder
½ tsp chilli powder
2 tsp of coriander powder
1 tsp of pepper powder
1 tsp of garam masala
Salt to taste
1 handful coriander leaves
2 3/4 cup water
3-4 tbsp oil

1)    Heat 2 tbsp of oil in a pressure cooker then add cloves, cinnamon and bay leaf
2)   When you get smell of  fried spice add sliced onion saute well till it become translucent add ginger garlic, green chilli and tomato one by one
3)  Saute well till the tomato become pasty in texture. This is the time to add chilli powder, turmeric powder, coriander powder, pepper powder, garam masala and salt
4)   Stir well then add cleaned pieces of fish and coriander leaves. Mix slowly then add 1 cup of water and cook for 10 minute
5)   Add remaining water and oil (If you are using basmati rice add 1/4 cup water more)
6)   Once it started to boil add washed rice
7)   Add salt and mix well
8)   Close the lid and cook in medium flame (flame should not be very low or very high. It should be in medium). Once first whistle comes keep 1 minute at high flame then switch off
9)   Open after 20 minute or once pressure comes down
10) Mix slowly and serve hot

Spicy fried potato n chicken (Fried chicken)

I Have already posted so many different kinds of chicken recipes but this recipe is my most favorite one. Anybody who loves spicy non veg dish definitely gonna become fan of this. Really.. this is a very tasty chicken fry. Normally, even if I prepare chicken dishes I don't like to eat much but I am telling you this is some exception ;) 

800 g chicken
3 potatoes
4 tsp of coriander seeds
1- 1½ tsp of pepper corns
1 tsp of cumin seeds
10- 15 dried round chillies
1 ½ -2 tsp of ginger garlic paste
1 tsp of lemon juice
Salt to taste
4 tbsp of oil

1.     Clean and cut the chicken into small pieces
2.    Heat a pan and add coriander seed saute well
3.    Then add pepper corn and cumin seed
4.    Saute well once it roasted well add chillies
5.    Saute for 1 minute then turn off flame. Let it cool
6.    Once it cooled grind well to make powder
7.    Add ¾th portion of this spice powder into chicken
8.    Then add lemon juice, ¾th portion of ginger garlic paste and enough salt
9.    Coat well and keep it for 30 minute
10. Boil water in a pot then add potato pieces (peel the skin and cut big pieces)
11.  Keep this at high flame for 5 minute. Drain off water
12. Add remaining spices and ginger garlic into it. Add salt and coat well
13. Add enough oil in pan and fry chicken pieces (shallow fry)
14. Drain and place fried chicken pieces in serving plate

15. Fry potatoes in same oil and serve along with chicken

Choco caramel apple with cake

This is really a simple recipe that we can prepare within 15 minute. I am not calling it as any special recipe it just a simple preparation with some ingredients that is available in any kitchen. But with this you can impress your guest.  Actually I don’t know what name should I give to this? If you can suggest any name please do....
Because of acidity problem last few days I preferring sweets only. So making something new every day :) now my son is so happy...

For mug cake
3 ½ tbsp of all purpose flour
2 tbsp of sugar
¼ tsp of baking powder
Pinch of salt
2 tbsp of coco powder (I used drinking chocolate powder)
½ tsp of vanilla powder
1 egg
1 tbsp of oil
1 tbsp of condensed milk
1 tbsp of milk (depends on batter thickness)
For apple
1 apple thinly sliced
2 tbsp of butter
1 ½ tsp of drinking chocolate powder
1 ½ tbsp of condensed milk
2 tbsp of sugar
One scoop vanilla ice cream (optional)

1.     1 used around 10.5cm length and around 7 cm width mug (cup) for cake
2.    Add all the ingredients in same cup and mix nicely. Make smooth batter
3.    Keep in microwave at high temperature for 90 seconds. Your cake is ready. Let it cool
4.    In a pan melt the butter then add apple
5.    Saute well and take out half portion of apple. Keep aside
6.    Add sugar into the pan melt and let the color to change light golden. At this stage add drinking chocolate and mix well. Turn off the flame
7.    Add condensed milk in other half of apple (that we already took from pan)
8.    Cut the cake (or make small uneven pieces) and place in a plate
9.    Add apple with condensed milk mixture on top of cake
10. Then add choco  caramel apple with syrup

11.  Place one scoop of vanilla ice cream and serve

Pineapple tart

Prepared a simple and easy pineapple tart. I didn't made any decoration for this simply kept plane. And I forgot the final step 'egg wash' that is what exactly gives its Shiny brown color.  You can see this is not shiny but the taste was super. The pineapple that I used here gave its exact taste really I loved it. I am sure your kids gonna grab this ;)

250 g pineapple (make pieces)
6 tbsp sugar
1 inch piece of cinnamon stick
40g butter (at room temp)
3 tbsp sugar
1 egg (or 3 tbsp vegetable oil)
1 cup of all purpose flour
Pinch of salt
1 egg yolk (or 3 tbsp of milk)

1)    Roughly blend pineapple pieces with food processor
2)   Transfer this into a pot/pan. Add cinnamon stick into it
3)   Cook in high flame stir continuously
4)   Once the juice has evaporated add 6 tbsp of sugar
5)   Stir continuously till it become thick and light brown
6)   Reduce the flame and cook till it detaches from the sides
7)   Turn off and let it cool
8)   Once it cooled make small ball and keep aside
9)   In a bowl add butter and sugar. Beat well
10) Then add egg into this and beat few more minute
11)  Add all purpose flour and salt
12) Mix nicely to make smooth dough (dough shouldn’t be too sticky and too dry)
13) Take small piece and flatten with your finger place the pineapple ball in centre. Make any shape

14) Arrange this in baking tray.  Finally brush egg yolk (or milk) on each tart and bake at 1600C for 25 minute
