Basbousa - an Arabic sweet

Today I am posting one of my favorite Arabic sweet recipe basbousa. After reaching here in Qatar I tasted this too many times. This is an important sweet dish serves during party time. My friends gave the recipe but each one prepares this with slight variation so I combined altogether and made my own ;). Now I am expert in basbousa ;) .  This is an easy sweet recipe that we can prepare with common ingredients.

¾ cup of semolina
¼ cup of all purpose flour
3 tbsp of sugar
¾ tsp of baking powder
2 tbsp of desiccated coconut (optional)
35 g of butter (melted)
1 egg (instead of egg you can add 2 tbsp of vegetable oil)
2 tbsp of yogurt
½ cup of milk
1 tsp of vanilla powder or essence
For syrup
¾ cup of sugar
¾ cup of water
½ tsp of lime or lemon juice
½ tsp of rose water (optional)

1)    Mix semolina, all purpose flour, baking powder, sugar and coconut together
2)   Add melted butter and then egg. Mix nicely
3)   Then add yogurt and milk. Make smooth batter
4)   Finally add vanilla powder/ essence
5)   Pour this in a greased 9 inch pan
6)   Keep in refrigerator for 15 minute
7)   Make diamond cut on the batter (score). Place cashew on each piece
8)   Bake at 1500C for 20- 25 minute (baking temp may vary depend on oven) or till edges become golden
9)   Mean time prepares sugar syrup by adding sugar, water, lemon juice and rose water. Once sugar syrup thickened (no need to make one thread consistency) turn off flame and let it cool
10) After 25 minute take out baked basbousa and again cut through the score line
11)  Pour cooled sugar syrup on top and keep 15 minute more for baking at same temperature

12) Separate the pieces and serve

Keep 15 minute more for baking
