Chicken bread pizza

After a long time I am posting kids favourite recipe bread pizza. This is my favourite too. All the time I have to fight with my son for a bite ;)

Ingredients
4 bread slices
1 ½ tbsp tomato sauce
1 tsp red chili sauce
½ tsp green chili sauce
Pinch of oregano
Pinch of garlic powder
3 tbsp chopped onion
3 tbsp chopped bell pepper
3 tbsp chopped tomato
3 tbsp chopped chicken pieces (chicken cooked with ¼ tsp pepper powder and pinch of salt)
3 -4 tbsp grated mozzarella and cheddar cheese
Pinch of salt and pepper
Preparation

Mix tomato sauce and chili sauces together then add oregano and garlic powder. Mix well and spread this on each bread pieces. Spread onion, bell pepper, tomatoes, chicken pieces and grated cheese one by one. Finally sprinkle pepper powder and salt. Bake for 15 minute at 1400C.

Hyderabadi biriyani- with stepwise picture

Today I am posting one more recipe- Hyderabadi biriyani. I am trying to post some recipes that was already in my draft for past few weeks. I am in hurry so not trying to write introduction. It’s simply awesome just try.


Ingredients
1kg chicken
2 tsp chili powder
½ tsp turmeric powder
1 tsp garam masala
1 tsp lemon juice
¾ - 1 cup curd
Salt to taste
1 ½ tbsp ginger garlic paste
4-5 green chili
Handful of coriander leaves
For rice
1 kg basmati rice
6 clove
2 cinnamon stick (1-2 inch)
1 tsp jeera
2 bay leaves
2 tsp oil
2 tsp lemon juice
Salt to taste
1 cup brow onion (fry 4 thinly slice onions in ½ cup of oil drain and use)
3-4 tbsp of fried cashews and raisins (fry this in 3-4 tbsp of ghee)
Pinch of saffron soaked in 3 tbsp milk

Preparation
1.     Marinate the chicken with chili powder, turmeric powder, garam masala, curd, ginger garlic paste, chopped green chili, coriander leaves and salt
2.    Keep this marinated chicken for 30 in cool place
3.    Wash the rice and soak it for 15-20 minute
4.    In thick bottom vessel add marinated chicken. Close the lid and cook in medium flame
5.    Another pot take enough water (8-10 cup) and add bay leaf, cloves, cinnamon, and jeera
6.    Once the water boiled add soaked rice
7.    Let it allow to cook 60%
8.    Once the chicken cooked about 70% mix the brown onion with it and cook for 5 minute
9.    Drain the rice and level it on cooked chicken
10. Finally sprinkle saffron, brown onion then add fried cashews and raisin (make two layer)
11.  On top of this pour cashews fried ghee spread it
12. Close the lid and cook at low flame for half an hour
13. Open the lid after half an hour serve the rice along with chicken pieces












Bread pudding

Today I am posting simple and tasty bread pudding. Don't require more ingredients. Even if you are having leftover french toast you can prepare this. 

Ingredients
6 slices of bread
3 eggs
1 ½ - 1 ¾ cup milk
6-8 tbsp sugar
1 tsp vanilla essence
Preparation
1.     Preheat the oven 1400C
2.    Grease  the baking tray and keep aside
3.    In a bowl beat eggs with sugar then add milk into this
4.    Add vanilla essence and mix well
5.    Cut the bread slices to small square pieces and arrange this in greased tray
6.    Pour egg milk mixture on bread piece and allow soak well
7.    Bake this at 1400C for 40 minute

8.    Serve hot or cold

Fish biriyani 2 - with stepwise picture

I gave the title as fish biriyani 2 because I already posted one type of fish biriyani that is Thalassery biriyani. This one is different from the first one.

This is my first after shifted to my new home, a calm and quiet area compare to first one. But the kitchen is very small I don’t know how I will adjust this... The whole month I was very busy still have too many works. I am chasing for a target so will post new recipes frequently. I know I missed so many good recipes of my blogger friends but I will catch those soon.

Ingredients
For rice preparation
1 kg basmati rice
5 cloves
4 cardamoms
2 bay leaves
1 inch cinnamon stick
Salt to taste
2 tsp lemon juice
2 tsp oil
For fish fry (shallow fry)
730g Fish
2 tsp chili powder
¼ tsp turmeric powder
1 tsp lemon juice
Salt to taste
3-4 tbsp oil
For masala gravy
4 medium size onions
2 tomatoes
3 green chili
1 ½ tbsp ginger garlic paste
1-1 ½ tsp chili powder
¼ tsp turmeric powder
Hand full of coriander leaves
½ garam masala
Salt to taste
3 tbsp oil
For garnishing and layering
2 onions (for brown onion)
¼ cup of cashews and raisins
3 -4 tbsp ghee

Preparation
1.     Wash and soak the rice for 20 minute
2.    Clean the fish pieces and marinate with chili powder, turmeric powder, lemon juice and salt
3.    Keep it aside for half an hour
4.    Shallow fry marinated fishes and keep aside
5.    Fry thinly sliced onion in ¼ cup of oil till it turn golden brown color and keep aside
6.    Fry cashews and raisins in ghee and keep aside with brown onion (add pinch of garam masala in it (optional))
7.    In a pot heat oil (I used the fish fried oil) at medium flame and add sliced onion. Saute well
8.    Add ginger garlic paste after that add green chili
9.    Saute nicely and add sliced tomatoes
10. Once it mixed well and the onion become transparent add chili powder, turmeric powder, garam masala and salt
11.  Add little bit of water then add shallow fried fish pieces
12. Then add coriander leaves and mix slowly. Close the lid and cook at low flame
13. Meantime prepare rice- boil enough water and then add clove, cardamom, bay leaves, cinnamon stick, 2 tsp lemon juice, 2 tsp oil and salt
14. Add soaked rice and cook. Once the rice cooked 70% drain the rice and transfer half portion into a new pot
15. On the top spread well prepared fish masala
16. Cover the fish masala with remaining rice
17. Spread brown onion, fried cashews and raisins (spread ghee on rice that used for frying)
18. Close the lid and keep in low flame for 20- 30 minute
19. After half an hour open the lid and serve hot

Egg Kothu porota

Today I am sharing tasty egg kothu porota. Simple and tasty dish. 




2 porota (I used kerala porota)
2 onions (medium size)
1 small tomato
2 green chili
½ tsp pepper powder
¼ tsp chili powder
¼ garam masala
Pinch of turmeric powder
Salt to taste
3 stalks curry leaves
2 eggs
1 tbsp oil

Preparation
1)    Heat a pan and finely chopped onion (at high flame)
2)   Saute well then add oil in it
3)   Add chopped tomato and green chili
4)   Sautes well next add chili powder, turmeric powder, pepper powder, garam masala and salt. Stir well
5)   Add eggs make scramble and add porota pieces before the egg started to get dry
6)   Mix well then mince nicely with any sharp object
7)   Mince well for 5 minute then add curry leaves
8)   Saute well for few more minute and serve hot

Bombay Halwa/ Karachi Halwa

To celebrate the happiness I am sharing sweet dish with you. Bombay Halwa / Karachi Halwa I am sure everyone knows this sweet and it is very easy to prepare. Its taste reminds my childhood days. My grand father used to bring this from Bombay (Mumbai). Shiny boxes containing different colors of Halwa!!!! that was great days I am really missing those days.


One more thing I would like to share with you. My friend Najla she prepared date cake by following my recipe (but instead of caramel topping she made chocolate frosting) and sent this photo to me I felt so happy when she told it came out well and her neighbors appreciated her. 

Ingredients
1 cup corn flour
1 cup sugar
1 tsp lemon juice
5-6 tbsp melted ghee
Pinch of cardamom powder
Sliced cashews
Pinch of permitted food color

Preparation
1)    Dissolve corn flour in ¼ cup water
2)   In a pan prepare sugar syrup by adding ½ cup of water in sugar
3)   Add lemon juice in sugar syrup
4)   Add corn flour mix in sugar syrup in a low flame with continuous stirring (mix corn flour before adding there is chance to get settle down) 
5)   Stir continuously and once it started to concentrate add ghee little by little
6)   Add cardamom powder and mix well
7)   Once it become required transparent and consistency (take small portion and if you can able to make elastic ball out of that then that is the right consistency)add food color and cashews
8)   Stir well and transfer into a greased tray
9)   Once it cooled cut into square pieces and enjoy
