Raisin cake

Days are very busy not getting enough time to spend here so directly going to the recipe...

3 eggs
2 tbsp oil
3 tbsp cream cheese
6 tbsp sugar
1 cup+ 1-2 tbsp all purpose flour
½ tsp baking powder
½ tsp cooking soda
Pinch of salt
1 cup black raisins
1 tsp vanilla essence

1)    Preheat the oven at 1400C (temperature varies with different oven)
2)   Soak raisins in hot water for 30 minute. Drain and coat with some all purpose flour (it helps for equal distribution)
3)   Beat the egg till it become creamy then add sugar and oil, beat well
4)   Add cream cheese and vanilla essence.
5)   Once it become smooth creamy textured add all purpose flour mixture (all purpose flour, baking powder, cooking soda and salt. Sift at least two times)
6)   Mix slowly by folding with spatula
7)   Add raisins and mix slowly
8)   Pour this batter in a greased baking pan
9)   Bake at 1400C for 45 minute or the tester comes out clean
