Fried chicken pulau

Normally when I prepare chicken pulau I feel masalas not coating well in chicken. So this time I tried with fried chicken. And you know its really doubled the flavor and taste. Chicken was well coated with spice and salt, this is what my husband prefer:) 


Ingredients
3 cup basmati rice
1 kg chicken
3 onions (thinly sliced)
2 tomatoes (sliced)
1 tbsp chopped ginger
1 tbsp chopped garlic
5-6 green chili (chopped)
1 bay leaf
2 star anise
5 cloves
5 split cardamom
2 inch cinnamon stick
½ tsp turmeric powder
2 tsp coriander powder
¾ tsp garam masala
¾ tsp chicken masala
Salt to taste
Corriander leaves
2 tbsp oil
For chicken marination
1 tbsp red chili
1/3 tsp turmeric powder
1 tbsp curd
Salt to taste
Oil for fry

Preparation
1)    Marinate the chicken pieces with turmeric powder, chili powder, salt and curd. Keep aside for 1 hr
2)   In a cooking pot add 2 tbsp oil then add clove, cinnamon, cardamom, bay leaf and star anise
3)   Once nice smell spread add sliced onion and saute till it turn translucent (add little salt while frying onion)
4)   Add chopped ginger, garlic and green chili
5)   Saute well for 2 minute. Add tomatoes and saute for 3 minute or till it cook well
6)   Add turmeric powder, coriander powder, garam masala, chicken masala and salt
7)   Saute for 3 minute or till it combine well
8)   Meantime in another pan fry chicken pieces and add this fried chicken in above onion mixture. At this stage you can add 1 tbsp oil (chicken fried oil), if you need.
9)   Mix well then add washed and drained rice in this. mix slowly
10) Add 6 cup boiling water with salt (never add cold water). Then add coriander leaves. Mix well and close the lid
11)  Cook for 20 minute in medium flame (mix intermittently)
12) One the rice cooked well. Mix the rice slowly. Keep open (to evaporate water content, if anything left)

Indian style Chicken pasta

Last time, when I Prepared chicken pasta I thought that is the best pasta I ever prepared . But now I am sure this is the best pasta I  prepared ever before. May be because this I prepared my own way or Indian style :).


Ingredients
250g boneless chicken pieces
2 onions (medium size)
Tomato
1 ½ tbsp sliced ginger and garlic
3 green chili (chopped)
1 ½ tsp chili powder
2 tsp coriander powder
¼ tsp turmeric powder
½ tsp garam masala
25 cashews
1 tsp dry fenugreek leaf
1½ tbsp oil
3 cup pasta

Preparation
1)    Soak cashews in water for 30 minute
2)   Heat oil in a pan and add ginger and garlic. Saute well.
3)   When started to change color add chopped onion. Saute for 3 minute
4)   Then add chopped green chili and sauté
5)   Add chopped tomato and mix
6)   Cook till tomatoes mash nicely
7)   Add all spices and salt. Stir for 3 minute or till oil separate
8)   Add chicken pieces. close the lid and cook
9)   Meantime boil 8 cup of water then add pasta, some salt and 2 tsp oil. Cook for 10 minute or per the direction on packet
10) Drain and keep aside
11)  Grind soaked cashews to make paste (add 2-3 tbsp water)
12) Add this cashew paste in cooked pasta
13) Add ¼ cup water and mix well.
14) Add fenugreek leaf, mix and keep in low flame for 2 minute

15) Add drained pasta, combine and serve hot

Orange pudding



1 cup milk
1 cup heavy cream
¼ cup condensed milk
2-3 tbsp sugar
2 orange (use only flesh part)
2 tsp sugar
1 tsp orange zest
8 g agar/ china grass

Preparation
1)    Peel and collect flesh part of orange. Then add 2 tsp sugar in this and keep aside.
2)   Soak agar in ¼ cup water for half an hour.
3)   Boil milk, once started to reduce its  volume add heavy cream.
4)   Stir continuously for 1-2 minute then add condensed milk and 2 tbsp sugar.
5)   Mix well and turn of the flame.
6)   Add orange flesh and zest (after few minute), mix nicely.
7)   Drain water from agar and keep this on boiling water, stir well till it melt completely.
8)   Add melted agar in orange milk mixture.
9)   Transfer pudding mixture in a tray or bowl.
10) Keep at room temperature until it cool.
11)  Keep in refrigerator for 1 hr then serve cold.

Peanut butter cookies

I am sharing my first cookies recipe. But this is not my first attempt to make cookies I tried twice before (not peanut butter cookies). Because the result disappointed me, I never tried to make cookies after that. Day before yesterday my son asked for cookies so I tried this simple classic peanut butter cookies. Cookies was so yummy...can't describe how much happy I am :) 

Ingredients
1 cup peanut butter
1 cup powdered sugar
2 eggs
1 ½ cup all purpose flour
½ tsp baking powder
½ cooking soda
1 tsp vanilla essence

Preparation

Preheat the oven at 1700C. Beat peanut butter and sugar to make smooth. Add eggs and beat again. Once it blend well and became soft add all purpose flour, baking powder, cooking soda, and vanilla. Combine well and make dough (don’t over mix). Take small and make small balls. Arrange this ball in baking with around 2cm distance. Press down and make design with fork. Bake at 1700C for 15 minute. After 15 minute transfer the baked cookies in a cooling rack. Once it cooled well enjoy your cookies.

Kariveppila thenga chammanthi/ curry leaf coconut chutney


Ingredients
1 cup curry leaves
¾- 1 cup grated coconut
7 dried red chili (adjust as your taste)
Small lemon size tamarind (smallest)
Salt to taste

Preparation
Soak tamarind in 2-3 tbsp water and keep aside. Heat a pan then dry roast coconut, curry leave and red chili. Once coconut started to change color (no need to make brown) turn off flame. Add salt and soaked tamarind with water. Grind this together and serve with hot rice.

Banana cake

Yesterday was very busy day. Prepared two cakes, four side dishes for rice . One thing made me very happy that the two cakes were grand success. Day before yesterday I prepared one cake that was flop to compensate that, from morning I started cake preparation ;). Here I am sharing very yummy banana cake...

Ingredients 
3 Bananas (ripe)
2 eggs
½ cup powdered sugar
70 g butter (unsalted)
1 cup all purpose flour
¼ tsp baking powder
¼ cooking soda
Pinch of salt
Vanilla essence


Preparation
1)    Preheat oven at 1500C
2)   Peel banana then mash with fork or spoon and keep aside
3)   Beat butter(room temperature) to make soft then add powdered sugar
4)   Mix by beating then add two eggs
5)   Mix egg nicely with spatula or spoon(don’t over beat eggs)
6)   Mix mashed banana into above mixture
7)   Mix well then add all purpose flour, baking powder, cooking soda, salt finally vanilla essence
8)   Once it mixed nicely transfer the mixture into greased baking dish (either you can layer parchment paper at bottom of baking dish or spread some all purpose flour in greased baking dish.)

9)   Bake at 1500C for 60 minute
