Mutton rogan josh


There are so many variations in Rogan josh preparation and honestly I am searching for the original one, please if anyone knows the traditional preparation just share with us. I know this is not the exact way of preparation but the final result is very nice. 
Ingredients
300-400g mutton (I used rib part)
2 tsp pepper powder
½ tsp fennel powder
2 tsp vinegar
3 clove
Small cinnamon stick
One bay leaf
3 split cardamom
2 onions
1 tbsp ginger paste
½ tsp saffron (optional I used for color)
2 tsp kashmiri red chili powder (less spicy but having vibrant red color)
½ tsp turmeric powdr
1 tsp coriander powder
¼ tsp pepper powder
¼ fennel powder 
Salt to taste
2½ tbsp oil

1)    Marinate mutton pieces with pepper powder, fennel powder, salt and vinegar. Keep aside
2)   Soak saffron in ¼ cup water for half an hour. Then add chili powder, turmeric powder, and coriander powder. Mix well and keep aside
3)   Heat oil in a pot and add cloves, cinnamon, cardamom and bay leaf (I forgot to add this stage so added later)
4)   Once nice smell comes add onion paste (blend onion to make paste)
5)   Saute well for five minute than add ginger paste
6)   After two minute add marinated mutton pieces and fry for 8-10 minute
7)   Then add some water and salt
8)   Add prepared saffron red chili mixture
9)   Mix well and close the lid.  Cook for 1 – 1 ½hr (slow cooking). In between open the lid and add pepper powder and fennel powder
10) Once mutton cooked well switch off the flame and serve hot
