Carrot pola / carrot kums / carrot pudding -stepwise picture

I am with one more pola recipe :) Carrot pola. Carrot pola is another sweet dish from North Malabar. Because of its color and taste I am sure everyone will love this. You can’t really make out what is the exact ingredient used in it. By varying the quantity of ingredients you can adjust its texture. Same as apple pola it can serve as cold or hot.

2 carrots
3 eggs
5 tbsp milk powder
4-5 tbsp sugar
1 tbsp all purpose flour (optional)
½ tsp baking powder
A pinch of cardamom powder
1 ½ tsp ghee

Peel and cut the carrot into small pieces. Cook the carrot with 1 cup of water. Blend the cooked carrot with eggs. Once it blends well add sugar, milk powder, all purpose flour, baking powder and cardamom powder. Blend well to make a smooth batter. Meanwhile, heat ghee in pressure cooker (I used 3 liter capacity). Add batter in to the pressure cooker and close the lid without weight. Cook in low flame for 20 minutes or till the inserted tester comes out clean. In-between (after 10 minutes) opens the lid, then decorate with cashews and raisins.

Note: you can use non-stick cooking pot so the sides will not get burned.
