Butter cookies with pineapple jam - stepwise picture

Today I am sharing another cookie recipe- butter cookies with pineapple jam. The method is not same as normal butter cookie preparation. Here I used cold butter so sugar will not dissolve completely. As a result, you can feel sugar inside.

100g unsalted butter
¾ cup + 2 tbsp or  1 cup  powdered sugar
1 ½ cup all purpose flour
Pinch of salt
¼ tsp baking powder
1 tsp vanilla powder or vanilla essence
1 egg
¼ cup pineapple jam


Preheat the oven at 1700C (temperature may vary depends on oven). In a bowl take butter (cold butter is more better) then soften it. Add powdered sugar and mix well (no need to dissolve sugar completely). Add all purpose flour along with baking powder, salt and vanilla powder. Mix with your hand, then add egg into this. Mix well to make dough. Take some portion and roll it. Cut into small pieces (size you can decide, but keep this in mind, cookie will expand during baking). Place each cookie in greased baking tray. Make one impression at center, with your finger. Bake in preheated oven at 1700C for 12 minutes. After 12 minutes take out the cookies and make the same impression once again. Keep back in oven and bake for 3 minutes. Add jam in the center, then bake again for 2 minutes (try to use home made jam it will taste great).
