Avial- Kerala style - with stepwise picture



Avial- The one recipe I never fail...
Ingredients
Drumstick/ Muringakka
Carrot
Yellow cucumber/ vellarikka
Yam/ elephant foot yam/ chena
Raw plantain/ Pachakkaya
½ tsp turmeric powder
¾ cup grated coconut
4 green chili            
¾ tsp cumin seed
½ cup curd
Salt to taste
2 tbsp coconut oil
Curry leaves


Preparation
1)    Cut the veggies into 7 cm length and 5 mm thickness (take around 10-15 pieces)
2)   Heat 1 tbsp of oil in a pot, then add all veggies one by one
3)   Add some curry leaves, then turmeric powder and salt
4)   Mix well and close the lid. Cook in medium flame without adding water
5)   Grind the grated coconut with cumin seed and green chili
6)   Add this ground coconut in cooked veggies. Mix well and keep for 3 minutes
7)   Switch off the flame and add curd. Mix well and finally add 1 tbsp of coconut oil and some curry leaves.
8)   Avial ready..
