Banana coconut cake





Ingredients

4 overripe bananas
50g unsalted butter
2-3 tbsp oil
2 eggs
1 cup powdered sugar
2 cup all purpose flour
1 cup grated coconut
¾ tsp baking powder
pinch of salt
1 tsp vanilla essence

Preparation

Preheat the oven at 1600C.

1) Peel and mash the bananas with fork or spoon.
2) In a separate bowl add butter (room temperature), oil and eggs, beat well then add sugar and mix well.
3) Once the sugar completely incorporated with mixture add into the mashed banana.
4) Then add all purpose flour, baking powder and salt. Mix well, add coconut and vanilla essence.
5) Pour the mixture into a baking pan lined with parchment paper and greesed with some butter.

6) Bake at 1600C for 40 minute (temperature may vary between 160-1800C depend on your oven and corresponding time) or till an inserted tester comes out clean.
