Banana pancake roll /Plantain pancake roll

Around two year befor I prepared this dish. From that time this recipe was in my draft. Now I am giving it a life ;)

3 plantains
2 tbsp ghee
½ cup jaggery
½ tsp cardamom powder
1 ½ cup all purpose flour
1 cup milk
1 ¼ cup water
¾ cup rated coconut
salt to taste

1)     Melt the jaggery in ¼ cup of water by heating at medium flame. Filter to remove any impurities and keep aside
2)    Peel and cut the plantains into small pieces then make puree in blender (without water).
3)    Heat a non-stick pan and add plantain pulp, then melted jaggery
4)    Mix well and cook on low flame. Stir continuously till side separated
5)    Add ghee and cardamom powder at this stage. Stir for few more minutes and turn off the flame (It will be looser than halwa consistency). Keep aside till it cool.
6)    Meanwhile prepare batter with all purpose flour, salt, milk and water.
7)    Heat a pan and make thin pancakes with this.
8)    Take one pancake and spread prepared banana mix equaly then springle the coconut.
9)    Do the same with all pancake. Roll each pancake and cut into 1inch pieces
