Banana semolina fritter

Overripe banana is a common problem in my house. What to do with this banana? This is the question I use to ask every weekend so my first preference goes banana cake, cookies… now I come up with another solution, yes this recipe. I loved when it came out as really tasty snack. Now I am addict to it J . Fortunately my son also loved it, though he is a picky eater.

2 overripe banana (Cavendish banana or 3 small banana)
1 cup semolina
¼ cup sugar
½ cup grated coconut
¼ tsp cooking soda
¼ tsp cardamom powder
pinch of salt
oil to fry

Mix all ingredient together except oil. Make soft dough (I am not sure should I call it as dough, it will be look like some what thick batter).
Heat oil in a pan.
Then take a small ball shape portion and drop it in hot oil.
Fry at medium low flame till it become golden brown color.
Repat the process till the dough finishes.
Have it with tea or coffee

Choco date crunch

15 deseeded dates
½ cup chocolate chips or plane chocolate
¼ cup cocoa powder (or drinking choclate) here I used dark cocoa powder
1 cup walnuts, almonds, cashewnuts
2 cups milk
¼ cup condensed milk
¼ cup sugar
15 numbers of ice cubes

First take dates, nuts, chocolate chips, cocoa powder, condensed milk, 1 cup milk and ice cubes in a blender. Blend it nicely (no need to make paste consistency you have to get tiny pieces of nuts while you drink). Once you blended well add remaining milk and sugar into it, blend it again. Serve chilled. You can serve it by decorating with whipping cream (it’s optional)

Kadalakka pola 2/ Chana dal cake flourless cake

This is my second kadalakka pola recipe, as I promised here I am with another way of kadalakka pola preparation. Enjoy...

3 ½  tbsp Chana dal
3tbsp milk powder
(½ cup water)
4 eggs
5-6 tbsp sugar
pinch of salt
pinch of baking powder
½ tsp vanilla essence
1 tsp ghee
some raisins, cahews or any other nuts I used walnuts

Soak washed chana dal in water  for 2 hr then cook by adding enough water. Take cooked chana dal in a blender, add milk powder blend well. First blend without adding water if not possible add water little by little you may need ¼ - ½ cup water not more than that. Keep ground chana dal aside. Beat eggs with beater add sugar in between, once it whipped well add chana dal paste, vanilla essence, baking powder and pinch of salt. Mix it slowly. Heat a nonstick deep bottom pan pan (try to take small I always use small so it will puff up more) add ghee into it. Once ghee melted turn off the flame. Pour our prepared mixture into it. Cover the lid. Place a tawa on flame, then place our pan on top of tawa. Cook at lowest possible flame for 20 minutes or till inserted tester comes out clean. In between you need to add raisins and nuts like after 10-15 minutes so nuts and raisins will settle on top.

Thank you for taking time
